GINGERBREAD CHEESECAKE
It's almost Christmas so I decided to make a cake that will create a festive atmosphere in our homes. And I came up with this cheesecake!! I hope you would like it as much as I did :)
Ingredients:
For a ginderbread bottom:
- 400 g gingerbreads covered in chocolate
- 100 g melted butter
- 1 kg minced curd for cheesecakes
- 2 eggs
- 1,5 tbsp potato starch
- 1,25 cup sugar
- 1.5 tbsp gingerbread spice mix
- Another few chocolate gingerbreads and a bit of cocoa for decoration, but it's not obligatory(I didn't do that)
For the gingerbread bottom:
- Crumble the gingerbreads, firstly with your hands and then with a blender
- Add the melted butter and mix
- Put the mixture into a round cake pan covered with baking paper and put into the oven heated to 175 C. Remove after 12 min and let cool
- Mix all te ingredients except for spice mix
- When everything is combined, add the spice mix
- Put the mixture on a gingerbread bottom and then put into the oven heated to 175 C. When the cake is ready (a toothpick taken out of the cake should be dry), after about 45 min, remove from the oven and let cool. Refrigerate for couple of hours
- I didn't do that, because I simply lacked enough time, but what you can do is crash a few gingerbreads with hands and sprinkle the cake with them. Then put a few bigger pieces of gingerbreads and sprinkle all with cocoa
